The 3 Ingredient Pancakes

Looking to spruce up your breakfast this weekend? I know that eggs can sometimes feel redundant (even for this egg lover), so I have a tasty treat in store for you -- pancakes! These are not your ordinary pancakes. They consist of three simple ingredients, which are staples in my kitchen, making them super easy to whip up! They also provide an array of health benefits, including lowering your cholesterol, plus they taste delicious. I'm not even a huge pancake fanatic but these really take the cake (get it?!). Are you ready for the recipe?

  • Eggs: You can learn all about eggs here but for a few highlights -- eggs actually LOWER cholesterol levels and heart disease contrary to previous belief. Eggs are full of nutrients and high quality protein (if you are eating the right ones!).

  • Banana: An average sized banana has 440 mg of potassium which is the most important electrolyte in the body! It helps stabilize heart function and fluid balance which are both key factors in regulating blood pressure. They are also good for the gut as they are high in pectin which is a soluble fiber that lowers cholesterol and normalized bowel movements.

  • Oats: Full of minerals like magnesium, selenium, and phosphorous. Oats are also high in magnesium, iron, and vitamin B1. The fiber is oats is full of beta-glucan which helps lower cholesterol by binding bile acids and removing them from the body through the bowel.

DIRECTIONS:

  1. Crack the eggs into a blender, peel and add the banana and oatmeal.

  2. Blend on medium for about 1 minute (you want to make sure the oats are ground up)

  3. Turn on pan to medium heat with a tsp of butter, ghee or coconut oil (I prefer the coconut oil!)

  4. Use a ladle or spoon to scoop out the pancake mix and pour onto pan. I usually cook 2 at a time but it depends on the size of your pan.

  5. Let cook for about 1 minute and then flip to the other side for about 30 secs – 1 minute.

  6. Now for the best part! Top with whatever you’d like. My faves? Grass-fed butter, almond butter, pure maple syrup, bananas, cinnamon, blueberries, pomegranates, strawberries or coconut cream!
