Broccoli & Zoodle Slaw

This broccoli & zoodle (zucchini noodles) slaw is high in antioxidants and cruciferous vegetables making it great for liver support.



Cabbage: Eating cabbage stimulates liver detoxifying enzymes that help flush out toxins.


Broccoli: Broccoli is a good source of glucosinolate, which supports enzyme production in the liver. These natural enzymes flush carcinogens and other toxins from the body, and may significantly lower risks associated with cancer.


Garlic: Just a small amount can activate liver enzymes that help your body flush out toxins. Garlic also holds high amounts of allicin and selenium, two natural compounds that aid in liver cleansing.


SERVES 4

2 large zucchini

1 large head broccoli

5 small rainbow carrots, peeled and sliced into long strips

1/2 small red cabbage head thinly sliced

1 red bell pepper thinly sliced


Citrus Almond Sauce

¼ cup coconut aminos

¼ cup almond butter

2 tablespoons fresh orange juice

1 teaspoon orange zest

2 teaspoons fresh lime juice

2 tablespoons extra-virgin olive oil

1 garlic clove

1/4 fresh peeled ginger

2 tablespoons toasted sesame seeds


1. Use a spiral slicer to transform the zucchini into noodles. Alternatively, you can purchase zoodles at some health food stores.

2. Chop the broccoli into small pieces

3. Combine the zucchini noodles, broccoli florets, carrots, red cabbage, and red bell peppers in a bowl.

4. Place all the Citrus Almond Sauce ingredients in a blender, and briefly process them until they are just combined

5. Pour the sauce over the zoodles and vegetables and toss until everything is well combined - feel free to let sit for awhile before serving.

6. Top with sesame seeds
